Flour-free chocolate cake.

Easter Greetings, Bloggers. My gift from Heidi, friend extraordinaire and our current skilful food shopper, is two bags of self raising flour. How does the girl do it!! Mr Sainsbury, for all his kind messages and a phone call still has not delivered any goods at all.
Should you be having no luck in obtaining flour and want to bake a chocolate cake for Easter Sunday tea the following recipe is both fat and flour free and very tasty.

Ingredients.
4 eggs, separated
150g icing sugar
3 tablespoons cocoa powder
225g ground almonds
1 teaspoon baking powder.

Whisk egg yolks and icing sugar 'til pale and creamy, fold in cocoa. Whisk egg whites in a separate bowl until stiff. Fold whites, almonds and sifted baking powder into the egg mixture in batches.
Put mixture in a 20cm buttered loose-bottomed cake tin and bake for 35 minutes at gas mark 6.
Because it's Easter I've added a topping of icing sugar and cocoa  blended with a little milk.

  1. H.I. used to make this cake. It is better than the flour equivalent. She used to use good dark chocolate.

    2. I go to my rural workshop every day. I am lucky. What I need now is something to do. I've lost about £20 thousand worth because the various new customers have had to close their gardens to the public and cannot afford it. Oh well, I still feel lucky.

    1. We are being VERY careful, Parsnip, as I hope you are too. We are both in the 'vulnerable' group and our family live hundreds of miles away. As mentioned in the post, our younger friends are looking after us wonderfully well while we try in vain to book a delivery slot from the supermarkets.

  6. It sounds and looks delicious, but fat free it is definitely not - almonds contain fat (as I am sure you know). But hey, who cares!

  7. Hello. I too am in the group of people not to go out for three months and, therefore, depending on others - strangers in my case - to do the shopping. Fortunately flour arrived so was able to have lemon cake for Easter. I have now been able to secure a regular supermarket slot for weekly deliveries. It won't start till the end of April but I'm ever so excited that it exists. I would never previously have imagined I could be excited about a shopping delivery!

  9. I really want to thank Dr Emu for saving my marriage. My wife really treated me badly and left home for almost 3 month this got me sick and confused.
